The garden is in full swing, though this year we are in desperate need of water. Thankfully my sweet husband has been diligent to help me out by keeping the veggies hydrated. We work together well, … I weed and he waters. 🙂

As I was making dinner the other night, however, I realized (like usual) that I didn’t have all the necessary ingredients to complete this above delicacy. So as I was making a pasta salad to take to friends who recently had a baby, I made extra noodles and threw this recipe together, inspired by the Raw Zucchini Ribbon Salad.
Pasta Zucchini Salad
Make the noodles of your choosing. (I made mine with radiatori noodles)
When the noodles are done add the following to suit your needs. (ie: fill the bowl!)
- Diced raw zucchini
- Grape tomatoes
- Black Olives
- Feta Cheese
Toss with Lemon Oregano Dressing ( below)
Lemon Oregano Dressing
* This dressing is something I had the chance to taste at a potluck and tried to come up with my own recipe.
1 c. olive oil or salad oil of your choice
1/2 c. lemon juice
2 -3 tsp of dried oregano
1 tsp. garlic
salt and pepper to taste
Place all in a sealed container and shake well.
* Toss on to the salad above. Eat right away or chill. Both options are divine!
